Pancakes with spinach, bananas, coconut and almond flour

Breakfast that will please everyone at home. Fruits and greens in a new format. Unusual green milk pancakes are aromatic thanks to coconut flakes, almonds and fresh mint leaves. Spinach gives pancakes a bright green color.

Eggs - 4 pcs.

Milk – 125 ml

Bananas – 315 g

Fresh spinach (or frozen) - 50 g

Fresh mint – 5 g

Coconut flakes - 30 g

Almond flour - 50 g

Wheat flour - 60 g

Baking powder - 5 g

Sugar - 30 g

Butter (for frying) - 30 g

To serve (optional):

Yogurt (without additives) – 100 g

Honey - 40 g (to taste)

Cranberries (or other berries) - 50 g

1. Fresh spinach can be replaced with frozen. The spinach needs to be thawed first. Take small eggs. Buy bananas that are well ripe. They are much more aromatic and sweeter. Use milk of any fat content. Instead of butter, you can use a little vegetable oil for frying.

2. Sift wheat flour into a deep bowl, add almond flour and baking powder, mix.

3. Place the spinach and mint leaves in a colander and rinse well. Shake several times to remove excess liquid.

4. Place the prepared spinach and mint leaves into a blender bowl.

5. Peel the bananas (the weight of peeled bananas is 200 g). Cut the bananas into slices and add to the spinach.

6. Beat the eggs in there.

7. Add sugar. And pour in the milk. Grind until smooth.

8. Pour the contents of the blender into a large bowl, add coconut flakes, mix.

9. Add flour mixture with baking powder, stir. The dough is not very thick, but not liquid either.

10. Place the frying pan over moderate heat and grease with butter. Mix the dough and scoop it with a ladle, pour it into the center of the hot frying pan and spread it in a circular motion along the bottom. I made pancakes with a diameter of 12 cm. Fry over medium heat for 2-3 minutes, until holes form on the surface.

11. Turn over and fry in the same mode until golden brown on the other side.

12. Place the fried pancake on a board or plate. Fry pancakes from the remaining dough in the same way. I got 13 pieces.

13. If desired, pancakes can be supplemented with a simple sweet sauce from available ingredients. For the sauce, combine plain yogurt (I used thick homemade yogurt) and honey in a deep bowl. Stir until smooth.

14. Serve banana and spinach pancakes with yogurt sauce and berries or sour cream or any sweet additives.
