Duck legs “Confit”

Duck legs - 2 pcs.

Garlic - 2-3 cloves

Dried thyme - 0.5 tsp.

Salt - 0.5 tsp.

Ground black pepper - 3 pinches

Duck fat - 3 tbsp.

Hot water - 150 ml

1. Rinse the duck legs thoroughly and dry with paper towels. Place in a deep container in which they will marinate. Sprinkle with salt and ground black pepper.

2. Peel the garlic cloves, rinse in water and press into a container. Add dried thyme there. If desired, other spices or seasonings can be used instead of thyme. Massage the duck legs with pressure so that they absorb all the aroma of the spices. Leave them in the refrigerator for about a day, turning and massaging them from time to time.

3. After the specified time, remove the legs from the refrigerator and warm them for about 1 hour at room temperature. Rinse off large parts of spices and garlic, otherwise it will burn during long baking and the dish will taste bitter. Preheat the oven to 170-180 degrees. Place the duck legs in a baking dish.

4. Place the duck fat there and add hot water - it will boil away during the cooking process. You can simply melt the fat and pour it over the legs.

5. Cover the pan with foil and place in the oven for at least 3 hours. Monitor the level of liquid in the pan so that the legs do not burn.

6. Ideally, the water should all boil away, and the fat should remain at the bottom of the mold. The legs should brown and become juicy and tender in taste.

7. Carefully place the finished Confit duck legs on a plate and serve with berries and berry sauce. The meat will literally disintegrate into fibers from prolonged simmering - it’s very tasty!
