Today I want to share with you a recipe for a Chinese dish called Kale Ji Chi. Under the mysterious name lies a dish beloved by millions of people - fried chicken wings. But, of course, not ordinary fried wings, but cooked with a special twist - in a Coca-Cola-based sauce. It sounds unusual, but in fact this is one of the simplest, most delicious and unusual ways to prepare wings.

If you like bright, complex combinations of flavors, Kale Ji Chi's wings will win you over from the first bite! The taste of these wings contains saltiness, sweetness, spiciness, and smoky caramel notes. The combination of tender meat and spicy sauce turns out incredibly appetizing!

To prepare chicken wings in Coca-Cola, the wings are first quickly fried until golden brown, and then filled with Coca-Cola and cooked for some more time until most of the liquid has evaporated. The remaining liquid turns into a spicy, glossy sauce with a rich, sweet and salty flavor. On the one hand, the sauce turns out to be quite thick and envelops the wings like a glaze, but at the same time remains fluid enough that you can dip pieces of chicken or bread into it. To say it's delicious is an understatement! Try it!

Chicken wings – 1 kg

Coca-Cola - 1 l

Vegetable oil – 2 tbsp.

Sugar - 1 tbsp. with a slide

Soy sauce – 1 tbsp.

Chili sauce – 1 tbsp.

To serve (optional):

Green onions – 1 stalk

Sesame – 1 pinch

Bread - to taste

1. Wash the wings, dry them and cut them in half.

2. Heat a frying pan over medium heat. Add vegetable oil and sugar.

3. Stirring, heat the sugar in a frying pan until the crystals turn first into syrup and then into golden caramel.

4. Carefully add the wings to the pan. The caramel and butter mixture will get quite hot, and when you add the wings to the pan, there may be quite a bit of splatter in the first few seconds.

5. Fry the wings in caramel for 2-3 minutes until golden brown. Stir the wings several times to ensure even color and caramel coating.

6. Add soy sauce and chili sauce to the pan. Stir and fry the wings in the sauce and caramel mixture for another 1 minute.

7. Pour Coca-Cola into the pan until the liquid barely covers the wings.

8. Depending on the size and depth of the frying pan, the size of the wings themselves, you may need a little more or a little less Coca-Cola, but, as a rule, it takes about 1 liter of drink. Increase heat to high and bring sauce to a boil. At this point, you can taste the sauce and add a little more salt and hot sauce if necessary. However, you should not add too much spices or sugar - during the cooking process the sauce will boil down and the taste will become much richer.

9. Reduce the heat so that the sauce is constantly simmering intensely, but does not run away. This way the sauce will reduce as quickly as possible, and the wings will not turn out “boiled”. Cook the wings until the sauce is reduced by 2/3. Typically the process takes about 35–45 minutes. When the sauce reduces, thickens and acquires a glossy shine, it’s ready!

10. Kale Ji Chi or chicken wings in Coca-Cola are ready! Bon appetit! Serve the wings with the sauce, sprinkled with toasted sesame seeds and green onions if desired.

Tip: When cooking chicken wings in Coca-Cola, use a large, heavy-bottomed frying pan. If you have an old, seasoned or cast iron frying pan, that’s absolutely perfect! If you are preparing a double portion of wings, divide them into 2 parts of 1 kilogram each and cook separately, in two different containers. Too large a volume of wings is difficult to fry well and evenly, as well as to quickly evaporate a double volume of liquid - there is a high probability that you will get overcooked wings instead of what you want.
